Vintage cocoa bean-to-bar chocolate-making on an artisan basis is a long and painstaking process with many steps. 

Almost the entirety of the chocolatiers in the world are best described as 'melters' meaning that they do not make their own chocolate and instead buy chocolate already made from large global manufacturers. Conversely, we are part of a very small group of artisan chocolate-makers who make their chocolate right from the cocoa bean.
