2016 Chocolate 'Moon Cake' Bouchées Series / 2016年限量版巧克力藝術月餅'Bouchees'系列
Following the release of our first and very successful '2016 Lunar New Year - Year of the Monkey' chocolate collection earlier this year, we just released another series titled: 2016 Limited Edition Chocolate Art ‘Moon Cakes’ Bouchées. This highly original series is an ‘East-Meets-West’ collection that is custom designed and hand-crafted for the 2016 Chinese Mid-Autumn Festival celebration. The series features specific sweet ingredients commonly found in traditional Chinese Moon Cakes, yet crafted using modern French based chocolate-making techniques. The ‘Chocolate Moon Cakes' Series does feature a 'dough' component. However, unlike the traditional dough recipe made from flour, golden syrup, alkaline water and vegetable oil, our version is based on a crunchy French 'Sablé Breton' cookie that is made from sweet butter, egg yolks, sugar, flour and baking powder, which provides its 'sandy' texture. Traditional moon cakes typically only have one type of filling (I.e. red bean, lotus seeds, etc.) and our versions are inspired by similar traditional ingredients including Red Dates - 5 Kernels - Red Bean - Green Tea, but prepared with a 'Western' angle. For example, dried red dates are chopped and replace other dried fruits (I.e. apricots, cherries, etc.) in a highly textured French confection called 'Florentins' rich in almonds and honey. The 5-Kernels are prepared similarly to the filling of pecan pies, but our version is a lot less sweet, more like a caramel jam chockfull of nuts and seed (almonds, peanuts, pumpkins, sesame, walnuts) rather than sweet filling with only a few nuts. And the most unique component of all in our version of moon cakes is the chocolate element, which is a soft ganache made with different fruit-based liquid caramels providing a smooth and creamy texture contrast to the dough and filling.
Our 'Moon Cake' are finished in the same fashion as chocolate bonbons, but in a larger format of 'bouchées' (2 or more bites) and enrobed (coated) in our own bean-to-bar dark chocolate and decorated with an embossed disc of almond paste, painstakingly hand-painted with cocoa butter colours. This Collection is packaged in our exclusive in-house custom designed and micro-run produced Limited Edition Wild Sweets® FoodArt photo-graphic art custom print gift box sleeve showcasing the illustration of the moon cake pattern decorating each cake. The Wild Sweets® 'Moon Cakes' Series features the following assortment of flavours;
- Red Date: Breton cookie, red date fruit florentin, orange zest caramel ganache.
- 5-Kernels: Breton cookie, 5-kernels in caramel jam, chestnut pear ganache.
- Red Bean: Breton cookie, red bean paste, raspberry lemon zest caramel ganache.
- Green Tea: Breton cookie, pistachio green tea paste, red fruit caramel ganache.
The moon cakes are round in shape, individually sealed in a clear wrapper and sold in gift box sleeves of 4-units (128g @ 32g each). The chocolate moon cakes must be stored at 16°C/60°F or less, away from heat and/or sunlight. Best consumed within 2-weeks from date of purchase.
This series is available on a Limited Release basis only from August 15 to September 15, 2016 or until supply last, which ever comes first. To guarantee supply, pre-orders can be made from Monday August 01, 2016. Although our 2016 Chocolate 'Moon Cake' Bouchées Series can be shipped, during this time of the year, we can only do so via Express Shipping only thus we recommend placing orders online prior to pick up at The Atelier.
