Vintage cocoa bean-to-bar chocolate-making, on an artisan basis, is a long and painstaking process with numerous steps, many of them involving a scientific approach. As Canada's only artisan science-based cocoa bean-to-bar chocolate-makers, we work closely with the University of BC in Vancouver on various research projects relating to the science of chocolate-making within Wild Sweets® micro-batch laboratory settings and small-scale machinery. The 2017 Wild Sweets® Vintage Limited Edition Series of cocoa bean to bar chocolate features an assortment of several bars made from different Single Origin cocoa beans. The bars are available ‘plain’ or ‘textured’ with pieces of a toffee-like ‘Nougatine’ made from salted butter caramel, roasted cocoa nibs & scented with vanilla bean for a novel all chocolate profile. All of our single-origin bars are made with only a few ingredients including roasted cocoa beans, organic cane sugar, a little added cocoa butter for mouth-feel melting properties, vanilla bean for flavour development during aging and non-GMO lecithin for viscosity control during crafting procedures.

Chocolate-Makers Notes: This 68% chocolate bar is made from Venezuelan trinitario with criollo tendencies cocoa beans, and specifically from the Ocumare region. The chocolate intensity would be best described as ‘medium’ with little acidity, astrigency and/or bitterness. After roasting, the beans exhume aromas of biscuit and hints of wood. The chocolate tasting notes include fruit (plum, peach, berries), vanilla, caramel and almond. 

Serving Size: Sold in a retail single unit bar box @ 55g each.

Serving/Storage: Chocolate bars must be stored at 16°C/60°F or less, away from heat and/or sunlight. Best consumed within 12-months from date of purchase.
