Synopsis: This cake is our own modern version of the classic French Tarte Bourdaloue — with a few twists! The typical harder sweet dough base is replaced with crunchy/soft cookie. The unctuous custard cream laced with poached fruits is still front-and-center, but we have added another layer of pure decadence: a cloud-like chocolate 'Chantilly' mousse!

Architecture: Sablé Breton cookie, almond custard cream, poached apricots and milk chocolate & Crème Brûlée Chantilly mousse are elegantly finished with a hand-painted chocolate design.

Suggested Pairing: Hot Chocolate, coffee or a sweet fortified wine such as Portuguese LBV Port, California Black Muscat and/or Australia Liqueur Tokay.

Servings: 770g / 7-8 portions [Standard serving = 110g / person]

Serving/Storage: This dessert must be stored in the fridge at all times and consumed within 48 hours of purchase. Remove from the fridge 1 hour before serving to allow it to reach the perfect serving temperature.
