Chocolate 'Butter & Nut' Cakes


This novel Wild Sweets® Constructivism confection revisits the classic Petits-Gateaux Secs or mini-cakes - Brownie, Financier & Frangipane. Our versions of the cakes are based on the original recipes, but with a few twists. Our Financier, a French classic moist cake, is made with ground roasted hazelnut instead of almonds to intensify the 'beurre noisette' [brown butter] content and flavour notes within the cake. For our version of the Italian Frangipane cake, we use moist almond paste rather than almond flour and perfume the cakes with freshly rasped citrus zest. And for the American Brownie - a rich butter & chocolate cake, we add pearls of our own cocoa bean to bar for a double chocolate taste and crunchy texture. All cakes are entirely coated in our dark bean-to-bar chocolate and simply finished with a brush stroke of cocoa butter colours making these 'new-classic' chocolate cakes all distinctly unique in both taste & texture. These cakes are great snacks to enjoy on their own and/or along side a cup of our Hot Chocolate or Chocolate Tea (Hot or Iced). They can also be the perfect base to make a quick dessert platter with our Spreads (I.e. Hazelnut Chocolate-Caramel Passion). 

Suggested Pairing: Hot Chocolate, chocolate tea (hot or iced), coffee or a sweet fortified wine such as Portuguese LBV Port, California Black Muscat and/or Australia Liqueur Tokay.

Serving Size: Sold in re-sealable jars with 6 cakes each (100g / 3.6oz per jar) in the following flavours;

  • Almond & citrus zest Frangipane
  • Hazelnut & brown butter Financier
  • Walnut Double chocolate Brownie

Serving/Storage: These cakes are sold frozen and can be kept in that state for up to 6-weeks (-18°C / 0°F). For best results, thaw in fridge for a few hours, overnight is best. Once thawed, cakes are best stored in the fridge and consumed within one-week from thawing. Remove from the fridge at least 30-minutes before serving to allow it to reach the perfect serving temperature.
