Synopsis: This Wild Sweets® Constructivism dessert is our distinct take on the French classic ‘Cream Puff / Eclair’. Our version is neither a round cream puff nor an oblong éclair, but rather square shape. Each of our C|Puff2 series is composed of a choux pastry, made with fresh sweet butter and whole milk,  and topped with a thin layer of almond flour cookie for added texture. The cooked choux / cookie base pastry is filled with an unctuous flavoured crème brûlée type cream and topped with a white chocolate Chantilly cream. The C|Puff2 are then finished with fresh fruits, herbs, fruit confit, and served with an encapsulated aroma pipette. And finally decorated with chocolate cereal pearls, paper thin and hand-painted chocolate petals and chocolate ‘pasta’ strands.

Architecture: Choux pastry & almond cookie crust filled with a dark chocolate custard cream, white chocolate Chantilly mousse, fresh raspberries, red fruit confit, red fruit Kirch aroma.

Suggested Pairing: Chocolate Iced Tea, coffee or a sweet fortified wine such as Portuguese LBV Port, California Black Muscat and/or Australia Liqueur Tokay.

Servings: 135g single serving portion

Serving/Storage: This dessert is made fresh to order only. Best consumed within 2-hours from assembly and/or must be stored in the fridge at all times.
