This is Wild Sweets® By Dominique & Cindy Duby version of the French 'Café Gourmand' - a selection of small pastries along with and a coffee - that can be served anytime between breakfast and dinner. Wild Sweets® Chocolate Tea Gourmand ‘Viennoiserie’ includes a cocoa bean to chocolate element in all pastries - all made and/or processed in our own chocolate-making lab. The Chocolate Tea Gourmand is sold as a kit and features the items posted below that provide each pastries with taste or texture element including a centrifuged fresh aroma oil, a novel fruit ‘confit’ made with only 20% added sugar (typical jam contain 50-60 % sugar) as well as a house-made crème fraîche Chantilly cream. The Wild Sweets® Chocolate Tea Gourmand ‘Viennoiserie’ Kit include the following items**

  • Biscuit: Tuscany ham, Jarlsberg cheese, cocoa nibs & Kalamata dried figs Biscuit served with a chives aroma oil & 20% sugar pear fruit confit.
  • Pavé: Chocolate, almond cream & butter croissant Pavé served with an orange zest aroma oil & 20% sugar apricot passion fruit confit.
  • Scone: Dried cherries, vanilla bean, Kirsch  & dark chocolate Scone served with a lemon zest aroma oil & 20% sugar red fruit confit.
  • Cream: 4 oz Créme Fraîche Chantilly
  • Tea: 12 oz cup of chocolate tea (see details below)

Wild Sweets® Chocolate Tea Gourmand ‘Viennoiserie’ is not sold with the traditional coffee, but instead with a ‘Chocolate Tea’ infusion made entirely from whole cocoa beans and aromatized with fresh elements (I.e. citrus zest). Our unique all natural 'Chocolate Tea' is made entirely from pure in-house roasted cocoa beans / husks only - no sugar and/or any other ingredients! The brewed tea is flavored with some vanilla bean powder, and fresh citrus fruit zest. This unique sugar-free infusion is a healthy beverage alternative to coffee as cocoa beans are rich in powerful antioxidants such as polyphenols and naturally contain very low levels of caffeine (less than 10-times that of coffee per serving).

Serving/Storage: These items are baked fresh to order and are best consumed the same day of purchase. If served the next day, for best results, we suggest to re-heat the pastries in a 325°F oven for 8-10 minutes or until warm in the center. All aroma oils, confits and Chantilly cream must be kept in the fridge at all times until service.
