Synopsis: This Wild Sweets® Constructivism dessert is our distinct take on the French classic ‘Cream Puff / Eclair’. Our version is neither a round cream puff nor an oblong éclair, but rather square shape. Each of our C|Puff2 series is composed of a choux pastry, made with fresh sweet butter and whole milk,  and topped with a thin layer of almond flour cookie for added texture. The cooked choux / cookie base pastry is filled with 2 unctuous flavoured crème brûlée type cream and topped with a whipped white chocolate Chantilly cream. The C|Puff2 are decorated with chocolate strands / cereal pearls on a hand-painted chocolate petal.

Architecture: Choux pastry & almond cookie crust filled with a William pear as well as hazelnut praline cream and topped with a white chocolate Chantilly.

Suggested Pairing: Chocolate Tea, hot chocolate, coffee or a sweet fortified wine such as Portuguese LBV Port, California Black Muscat and/or Australia Liqueur Tokay.

Servings: 110g single serving portion

Serving/Storage: This dessert is made fresh to order only. Best consumed on the same day of assembly and must be stored in the fridge at all times.
