This Limited Release Fall Shortcake Gateau combines a classic NY Style cheesecake with variations of seasonal tropical fruits aromatically synergetic and unique textures including;
Shortcake cookie made only of 4 ingredients: salted butter, ground almonds, flour and sugar that become a high texture base
NY Style slow baked cheesecake made with Philadelphia cream cheese and some sour cream
Financier biscuit - a classic French cake made with almonds that provide a moist and slightly firm texture.
Mango purée aromatized with vanilla is set with agar (plant based gelling product) for a another 'jelly' texture.
Passion fruit and coconut purée (not milk) mousse
Decorated with semi candied pineapple, whipped white chocolate Chantilly, roasted coconut, hand-painted chocolate strands and a rasping of freeze dried tropical citrus (lemon, yuzu, pineapple and/or mango) cocoa butter. Branding tag is not edible.

Servings: 7" x 3" (OD) / 1490g / 8-10 servings depending on portion size [I.e. 185g / person @ 8 slices].
Serving/Storage: This cake is finished fresh to order and must be stored in the fridge at all times. Best consumed same day as purchased / up to 48 hours
