This Limited Release Gateau features fresh BC-Local pears, aromatically synergetic elements and unique textures including;
Shortcake cookie - made only of 4 ingredients: salted butter, ground almonds, flour and sugar that become a high texture base
Dacquoise biscuit - a classic French roasted hazelnuts meringue style sponge cake with a unique ultra soft and very light texture.
Lasagna - BC-Local Okanagan Valley fresh pears cut into paper thin sheets and build into something similar to a 'lasagna' aromatized with Canadian maple syrup. The sheets are sprinkled lightly with agar (plant based gelling product) so that the pear juice from the fresh fruits released during a long and slow baking become set into a somewhat firm pear fruit / jelly texture 'lasagna'
Diplomat custard mousse - lightly sweetened roasted hazelnut praliné custard with a touch of butter and cream cheese lighten with vanilla whipped white chocolate Chantilly
Decorated with whipped white chocolate and hazelnut praliné Chantilly, candied hazelnuts, semi-dried lychee nuts, a rasping of freeze dried tropical citrus (lemon, yuzu, pineapple and/or mango) cocoa butter and chards of hand-painted dark chocolate. Branding tag is not edible.

Servings: 7" x 3" (OD) / 1360g / 8-10 servings depending on portion size [I.e. 170 g / person @ 8 slices].
Serving/Storage: This cake is finished fresh to order and must be stored in the fridge at all times. Best consumed same day as purchased / up to 48 hours
