This Limited Release 'Tarte Aux Fruits' features BC-Local fresh apples, pears and other aromatically synergetic elements and unique textures including;
Vanilla, Fleur de sel and almond flour Pâte Sucrée cookie crust
Crème d'amande - this unctuous cream starts with a stirred vanilla custard and is emulsified with sweet butter before baking into a creamy yet firm and light at the same time texture as it 'puffs' during baking.
Fresh BC-Local apples and pears sliced into paper thin sheets and layered together - similar to building a 'lasagna' - brushed with Canadian maple syrup and baked a low temperature to concentrate the fruit flavours. The 'lasagna' is then cut into cubes and placed over the almond cream and baked together.
Orange + passion fruit purées slightly sweetened with honey and aromatized with vanilla are set with agar (plant based gelling product) for a another 'jelly' texture.
Decorated with mini cubes of semi-dried fresh oranges, encapsulated fresh orange zest, honey roasted almonds, whipped white chocolate Chantilly and a rasping of freeze dried BC-Local cranberry cocoa butter. Branding tag is not edible.

Servings: 8.5" / 1550g / 8-10 servings depending on portion size [I.e. 190g per person @ 8 slices].
Serving/Storage: This cake is finished fresh to order and must be stored in the fridge at all times. Best consumed same day as purchased / up to 48 hours.
