This cake is a celebration of seasonal produces specifically designed for Thanksgiving dinner. The cake is intended to serve 6-8 people and each elements of the cake are designed to provide a different mouth-feel sensation and/or contrasting textures with different complementary aromatic ingredients including;
French sweet butter sablé cookie crunch baked to a ‘soft and crunchy’ texture
Dacquoise biscuit - a classic French roasted hazelnuts meringue style sponge cake - infused with an espresso coffee punch
Crispy crêpes cookies hazelnut praliné and roasted caramelized pecan crunch
Hazelnut praliné ‘Cremeux’ cream and baked spiced cream cheese / sour cream pumpkin ‘New York Style’ cheesecake insert
House blend cocoa bean to bar dark chocolate sabayon mousse
The cake is finished with chocolate ‘velour’ spray, dark chocolate whipped Chantilly cream, chocolate ‘soil’ and a hand painted dark chocolate pumpkin
Servings: 7" x 3" (OD) / 6-8 servings depending on portion size.
Serving/Storage: This cake is finished fresh to order and must be stored in the fridge at all times. Best consumed same day as purchased / up to 48 hours. Remove from the fridge at least 30-minutes before serving to allow the cake to reach the perfect serving condition (temperature, texture and aroma).
