As part of our 'Fresh' baked dessert program, we offer an assortment of novel baked pastries that include chocolate and in different textural forms.
The desserts are designed to provide a different mouth-feel sensation and contrasting textures. Currently, we offer the following selection;
Chocolate Golden Raisins Almond Croissant: an almond flour cornmeal sablé cookie base toped with a slow baked butter croissant, almond cream and Sultana raisins pudding sandwiched with a dark chocolate cremeux cream.
Chocolate Cranberry Custard Croissant: an almond flour cornmeal sablé cookie base topped with a butter croissant, vanilla and sweet dried sweetened cranberries slow baked custard cream sandwiched with a dark chocolate cremeux cream.
Chocolate Banana Brioche Custard Pudding: an almond flour cornmeal sablé cookie base topped with a sweet brioche, 70% chocolate and fresh banana slow baked cream custard pudding.
Chocolate Polenta Apple Cake: an almond flour cornmeal sablé cookie base topped with a polenta and a fresh slow roasted BC-Local apple custard cake sandwiched with a dark chocolate cremeux cream.

Servings: Sold by the single portion packaged in a glassine bag @ 160g / 5.7oz each
Serving/Storage: This baked item can be kept at room temperature (16°C or less) away from light and humidity. Product must be eaten the same day of purchase.
Optionally, you may want to 'warm up' slightly the product in a toaster oven for 4-5 minutes. Do make sure to place the product on a tray lined with a silicon mat ot paper before toasting. Let product cool for about a minute before serving as the chocolate filling will be soft and runny.
