Our distinct version of Hot Chocolate is made from our own blend of cocoa bean-to-bar chocolate of different origins. It contains only pure dark 70% chocolate that is ground into small granules for quick and easy emulsion and is perfect for a deeply rich French style Hot Chocolate. For that type of viscosity, use a ratio of one part (I.e. 50g) chocolate mix to 3-parts (I. e 150 ml) liquid heated to 65° / 150°F to retain as much of the volatile aroma. For the most 'pure' chocolate experience, we suggest using water as the liquid otherwise use milk (I.e 2%). To mix, we recommend using an immersion blender type mixer to get the best emulsion / dispersion possible.
For a more 'fluid' texture, the amount of liquid can be increased to your liking.
The Reserve Series expresses art & science in the selection of single origins cocoa beans based on their aromatic synergies. Elegant and balanced, the Reserve Series reflects our passion and commitment to chocolatemaking excellence in a different 'liquid' format than the bars.
Limited in quantity, this exclusive Reserve Hot Chocolate won two Silver Medals at the Academy of Chocolate competition in London, England in November, 2021. We entered both the 'Water' and 'Milk' categories and barely missing Gold based on the judges comments. Specifically, this Reserve features a premium blend of our single origin cocoa bean to bar 70% chocolate including Tanzania Kokoa Kamili, Peru Ucayali River and Dominican Republic Zorzal Cocoa.
