This cake may look like a plain chocolate cake. But this single origin Trinidad Rio Claro cocoa bean to bar dessert is all about true chocolate decadence for true chocolate lovers! There’s no fussing with espresso powder or vanilla extract in this cake, it is all about pure dark chocolate flavor!
We make this cake from simple ingredients, yet when combined they become one of the most decadent chocolate gâteau! Specifically, it includes the following;
The crust, for texture contrast, is our classic ‘Sablé Breton’ cookie, made with 4-basic ingredients: eggs, sugar, butter and flour. However, for extra texture and flavor, we add some ground almonds and cornmeal for a very surprising and delicious crunch.
The filling has only 4-ingredients: Trinidad Rio Claro cocoa bean to bar dark 70% chocolate mixed with unsalted butter, sugar and whole fresh eggs.
The topping, again for another texture contrast, is a whipped white chocolate ganache.
The simple décor includes a rasping of freeze dried strawberry cocoa butter and chards of hand-painted dark chocolate. Branding tag is not edible.

Servings: 7" / 900g / 6-8 servings depending on portion size [I.e. 110g / person @ 8 slices].
Serving/Storage: This cake is finished fresh to order and must be stored in the fridge at all times. Best consumed same day as purchased / up to 48 hours. For best texture, remove cake from the fridge and let stand at room temperature for about 30-minutes.
