The architecture of this cake starts with cookie base made with cocoa Bean to Bar dark chocolate pieces, brown butter & roasted peanuts baked to a ‘soft and crispy’ texture. Next a rich dark caramel egg custard cream followed by a caramel & almond paste mousse are added. The cake is topped with a white chocolate whipped Chantilly cream and butter croissant / blanched almond custard cream pudding double-baked for texture. The cake is simply decorated with some hand-painted chocolate stamping and is served with a French style cream caramel sauce with a touch of cinnamon powder. Provided in a separate container to be drizzled just before service.
