Our Créme Brulée Cookie Cake are designed to provide a different mouth-feel sensation and contrasting textures based mostly on one leading ingredient aroma - in this cake - hazelnut. The composition for the ‘Cookie Cake’ includes the following layers;
- Cookie made with cocoa Bean to Bar dark chocolate pieces, brown butter & roasted hazelnuts baked to a ‘soft and crispy’ texture.
- Hazelnut praliné and slow baked crème brûlée 'Cremeux' cream
- White chocolate and hazelnut praliné whipped Chantilly cream
- In-house slow drum roasted hazelnuts & hand painted chocolate petals decor
- The Cookie Cake is served with a French style cream caramel sauce with a touch of dried ancho chili powder. Provided in a separate container to be drizzled just before service.
