Our Wild Sweets® Signature Cocoa Bean To Bar Tasting Box Collection features an assortment of our own 70% cocoa bean to bar chocolate ganache made from single origin cocoa beans. The collection assortment is based on different aromatic series including;

'Salted Caramel': The ‘Fleur de Sel Vanilla Caramel Ganache’ features a golden caramel ganache crafted with fresh cream, butter, vanilla and fleur de sel sea salt.

‘Tasting + Pairing’: unlike the traditional ganache made with cream only, this collection features fillings that are first processed as aroma infusions (under vacuum and/or sous-vide) enhancing the aromatic makeup of the pairing ‘liquid’ including Okanagan Valley red wine or apple cider, LBV fortified wine as well as bottled fermented ale beer.

‘Herb & Spice Fruit Caramel: the ganache are made with fresh cream and liquid caramels made from 100% fruit juices infused with different herbs and/or spices.

Each chocolate is hand-painted and/or air-brushed with different cocoa butter colours in artistic patterns. The Signature Collection is packaged in our Wild Sweets® concept gift box and features the following assortment of flavours from left to right;

Middle row: Tasting & Pairing

  • Wine: Tanzania Kokoa Kamilli | Merlot, cherry & black pepper

  • Beer: Madagascar Bejofo Estate | Triple Ale, strawberry & cardamom

  • Fortified: Trinidad Gran Couva | LBV Port, blackberry & anise seeds

  • Cider: Ecuador Camino Verde | Apple cider, mango & cinnamon

Bottom row: Herbs & Spices

  • Licorice Root Strawberry Caramel Ganache

  • Vanilla Honey Apricot Caramel Ganache

  • Lavender Orange / Zest Caramel Ganache

  • Rosemary Lemon / Zest Caramel Ganache

 Serving Size: Sold in gift boxes of 12-chocolates (@ 9g each).
