LIMITED RELEASE: This cake is available for Pickup at our Factory Store Only up to August 28, 2022 and/or until supplies last / fresh fruits are in season.

This Limited Release 'Tarte Aux Fruits' features BC-Local fresh apricots and other aromatically synergetic elements and unique textures including;

  • Vanilla, Fleur de sel and almond flour Pâte Sucrée cookie crust
  • Crème d'amande - this unctuous cream starts with a stirred vanilla custard and is emulsified with sweet butter before baking into a creamy yet firm and light at the same time texture as it 'puffs' during baking. And topped with fresh BC-Local apricots.

  • Apricot purée slightly tangy to balance the natural sweetness aromatized with pure vanilla and set with agar (plant based gelling product) for a different texture jelly
  • Decorated with mini cubes of dried apricots, honey roasted almonds, fresh mint leaves, whipped white chocolate Chantilly and a rasping of freeze dried plum cocoa butter. Branding tag is not edible.

Servings: 8.5" / 1500g / 8-10 servings depending on portion size [Suggested serving = 185g / person for 8 slices].

Serving/Storage: This cake is finished fresh to order and must be stored in the fridge at all times. Best consumed same day as purchased.
