The Wild Sweets® ‘Double Origin Spirit’ Truffles features an assortment of our own 70% bean to bar chocolate ganache made from single origin cocoa beans and premium spirits of different regions of the world. Unlike typical ganache made with cream, this filling is made with specifically processed water-based aroma infusions (under vacuum and/or sous-vide) and formulated based on each cocoa beans aromatic heritage and/or that of the spirit.
As per the classic French Truffle, the fillings are coated in dark chocolate and rolled in cocoa powder. Vintage cocoa bean-to-bar chocolate-making, on an artisan basis, is a long and painstaking process with numerous steps, many of them involving a scientific approach.
